This site uses Google measurement tools, which run only with your consent, and a contact form for the trade. Here is everything you need to know, in plain words.

We are the data controller. We have no data protection officer because the law does not require one for a business like ours: for any question, write to us directly.
This site uses Google Tag Manager to run two Google tools: Google Analytics 4, which tells us how many people visit the pages and where they come from, and the Google Ads conversion tag, which tells us whether a paid campaign led to a booking. These are third-party cookies for statistical and advertising purposes.
None of these cookies is set before you consent. On your first visit a notice appears: you can accept, refuse, or change your mind at any time from the “Cookie preferences” link at the bottom of every page. If you refuse, the site works exactly the same. To remember your choice we use a single technical cookie of our own (cs_consent), which lasts six months and contains no personal data. The legal basis is your consent (art. 6.1.a GDPR).
Data collected by Google Analytics is kept for 14 months with the IP address shortened. Google also processes it outside the European Union, under the safeguards of the Data Privacy Framework. Google’s policies: policies.google.com/privacy.
We use no Facebook or other social pixels, we sell no data to anyone and we build no profiles of individual people.
Like every site, the server hosting these pages keeps technical access logs: IP address, date and time, page requested, browser type. They keep the site running and protect it from abuse, and the legal basis is our legitimate interest in security (art. 6.1.f GDPR). They are deleted within 30 days and we do not use them to identify you.
The form for importers, distributors and restaurants asks for company, name, country, email and, optionally, phone and a message. We use them for one thing only: to reply and to manage the business relationship that may follow (art. 6.1.b GDPR). The request reaches our mailbox and is logged in a backup file on our server, protected from outside access, so it is not lost if an email fails to send.
We keep these requests for two years from the last contact, then delete them. The form includes protection against automated submissions by bots which uses no cookies.
If you email or phone us, we use your details only to reply and to manage any relationship that follows. We keep them for as long as necessary and as required by law, and we pass them to no one for commercial purposes.
On the contact page the Google Maps map does not load by itself: it appears only if you press “Load the map”, and at that point Google may set its cookies. On the tasting pages a box with Tripadvisor reviews may appear, which is activated only if you accepted cookies from the notice.
Some buttons take you elsewhere. Once there, that service’s policy applies, not this one:
The fonts used for the text are hosted on our own server: when you open the pages your browser contacts neither Google nor any other external service to load them.
You can ask us at any time to access your data, correct it, delete it, restrict its use, receive it in a readable format or object to its processing (arts. 15–22 GDPR). You can also withdraw your cookie consent whenever you like, from the link at the bottom of the pages. Just write to info@cascinasot.com. If you think something is wrong, you can contact the Italian data protection authority, the Garante (garanteprivacy.it).

One question, then we’ll leave you alone: may we count visits with Google Analytics and find out whether our campaigns are any use? If you say no, the site works just the same. How it works
