What it actually is

A wine tasting in the Langhe, with us, isn’t a row of glasses on a counter. It’s about two hours in three parts: we start in the vineyards, move on to the cellar, and finish in the room built into the brick vaults of the farmhouse.

Your host is Maurizio, Lorena, Silvana, Leonardo or Gaetano — one of the family, always. In the tasting room you taste five or seven wines depending on the option, always with Barolo, paired with a board of local cheese and salumi.

The vineyards first

We start where the wine starts. The vines surround the house, inside the Bricco San Pietro cru, the largest in Barolo. We show you the differences between the vineyards, the exposures, the grey marl soils you can recognise by eye, and why this hill gives one Barolo and not another.

We also tell you how we work them: grass between the rows, no herbicides, treatments kept to the necessary minimum. The winery is certified for integrated production, audited every year by an independent body.

Then the cellar

From the vine to the bottle, in the same order as it happens: the destemmer, the oak vats where the Nebbiolo sits on its skins with three punch-downs by hand every day, the large casks and tonneaux where the Barolos spend their years.

There’s one thing we’re happy to show, because nobody else has one like it: to control temperatures during fermentation we built a heat exchanger that uses cold water from an old well. And for tartaric stabilization we use the winter cold, not a machine. No energy used, no carbon dioxide produced.

And finally the glass

You taste in order: starting with the whites — Chardonnay and Nascetta — then the Rosato or the Dolcetto, then the Barberas, the Langhe Nebbiolo, and finishing with the Barolos.

We tell you about every wine: which vineyard it comes from, how it was made, what to look for. And the questions are the best part.
