During the alcoholic fermentation we control  the temperature by using the water present in the old corporate well  in order  to limit the energy consumption.

For the pressing of marc We use an old vertical press that we properly renovated and to which we have replaced the old strips with new ones made of oak. This allows us to have a very soft action, thereby improving quality.
